Peak summer felt like the ultimate moment to dive into my next Chilling By The Pool series. If you work in the industry, you’ll know that July and August mark the season’s midpoint, when the heat, late nights, and endless socialising start to catch up with you. So, the chance to unwind poolside at the five-star resort Nobu Ibiza Bay Hotel was nothing short of pure bliss.
Situated a mile away from Ibiza Town, on the idyllic shores of Talamanca Bay, Nobu is far from the hustle and bustle, sitting on a pristine promenade overlooking crystal clear waters and a soft sandy beach, with yachts floating along the horizon.
Just a short walk from some of the island’s most stunning hotspots, it's not far from the trendy boutiques and restaurants of Marina Botafoc and, of course, Dalt Vila. So, if you're a hotel guest, lucky you! If not, Nobu offers an array of day passes so that you can enjoy its luxurious offerings for the day.
Pulling up to the hotel, a row of sleek luxury cars hinted at the experience ahead. A warm welcome from the valet set the tone, and as we stepped inside, the grandeur was immediate. The reception’s design is breathtaking, with soft lighting, chic interiors, and the show-stopping pool framed perfectly by the calm blue expanse of Talamanca Bay.

Arriving at 11:00, the pool area was still tranquil (it’s Ibiza after all!), which means we had first dibs of whichever sunlounger took our fancy. Poolside or ocean view. It’s a very tough choice, I know, but every corner of Nobu’s ‘Sun Deck’ has its own perks.
Towering palms swayed gently overhead, planes glided toward landing over the sea, and the silhouette of Dalt Vila lingered in the background. Even before the first sip of coffee, it was clear why this hotel holds its five-star reputation.
We eased into the day with fresh juices and a light breakfast. A flaky chocolate croissant and a creamy granola yogurt bowl with fresh fruit. The juice menu alone could keep any wellness lover happy, with endless combinations of greens, tropical fruits, and citrus blends.

By 13:00, the DJ arrived to amp up the day with some Deep House beats that added a nice vibe to the chilled-out day. Around us, some guests dozed in the sun, others sipped cocktails, and one small dog happily claimed a lounger of its own next to us. Talk about pampered pups!
When it came time for lunch, Nobu’s culinary offerings delivered exactly what you’d expect from a brand synonymous with excellence. From celebrity chef Nobu Matsuhisa’s signature dishes, to the laid-back Chambao beach restaurant, choices range from fresh sushi and seafood to hearty comfort bites. We ordered the signature sushi rolls (tuna and salmon with avocado), the indulgent sando katsu sandwich, and, because it was that kind of day, two Bloody Marys which went high on my island ratings.
You also have the choice of pizza, Nobu bites, Shuko snacks, cold dishes, sushi maki and sashimi to choose from.
Families aren’t left out either. A separate family pool, complete with equally stunning views, sits just around the corner, along with a dedicated kids’ club to keep younger guests entertained.
Beyond the pool, Nobu Ibiza Bay offers plenty of ways to elevate your day for a little extra. Book a treatment at the Six Senses Spa, join a guided hike, practice yoga at sunset, or recharge with a sound bath.
We rounded off our day with a signature Nobu fruit platter. When it turned up, we were surprised at how reasonably priced it was at just 14 euros. Again, this was just another touch that makes Nobu stand out that little bit more.
