As temperatures begin to rise and seaside dining makes a welcome return, acclaimed Spanish chef Dani García’s BiBo pop-up at the elegant Nobu Ibiza Bay Hotel is making a splash with its fresh and flavoursome cuisine.
Foodies from all over the island are invited to stroll in from Talamanca’s beach promenade any time between 13:00 and 23:00 to savour the unique cocktail creations, tapas-style sharing plates and mouth-watering street food dishes.
In collaboration with Mexican Chef Abril Chamorro, the menu features a wide range of seafood, meat and ‘raw’ dishes that include some Spanish cuisine classics, as well as authentic flavours from the streets of Mexico.
BiBo Ibiza Bay has an elegant, yet relaxed atmosphere and overlooks the sparkling blue waters of Talamanca beach. It’s the perfect spot for a leisurely lunch that extends into the evening, with the impressive cocktail menu tempting you to stay for ‘tardeos’ – late afternoon drinks – while listening to some expertly spun beats.
With the music programme curated by renowned international selectors Sebastian Gamboa and Guy Williams, the scene is set for a vibrant meal with your nearest and dearest.
Start with one of the unique cocktail creations like the Asian Sour, which mixes Roku Gin with red apple, lavender and black tea aromas for a sweet but sophisticated effect. The Whisky Sour Calabaza, a pumpkin-spiced take on the classic, arrives with theatrical flair from underneath a glass dome filled with smoke.
To experience the full range of incredible flavours, we recommend to share a variety of plates with your fellow diners. BiBo’s famous oxtail brioche is a must; a moreish bun filled with tender slow-cooked meat that is already a top seller in the dining concept’s other venues in Madrid, Marbella, Tarifa and Doha.
Fresh guacamole prepared at the table makes a fun sharing dish, while the bipolar tuna tartar and zesty corvina ceviche are a vibrant feast for both taste buds and eyes.
The BIBA section on the menu is dedicated to Mexican street food, and you simply can’t go wrong with a tasty taco selection like the ‘al pastor’ variety with chicken and grilled pineapple. Be prepared for the lubina fish tacos to cause a spontaneous outburst of ‘hmmmms’ and ‘aaaaahhhhs’ around the table!
Finish off with a light and refreshing mango, lime and ginger ‘raspado’ of ice shavings or a decadent and sweet rice pudding with a crunchy layer of caramel.
