Ibiza Salt: Where does it go?

Ibiza has been producing salt for thousands of years in Las Salinas using methods introduced by salt mad Phoenicians. But have you ever wondered where all those mountains of pure white crystals disappear to at the end of the summer?



Well, thanks to a recent cold spell in northern Europe about 10% of it is on its way to England to help clear the snow covered roads and streets. A British company has just purchased 3,280 tons of salt – about a boat load – for grit wagons in ice age England.

The averaqe annual salt production these days in Ibiza is around 37,000 tons of which 20,000 goes to the Faroe Islands to salt the fish they catch there. Gastronomy fans will also be interested to hear that some of Spain's most famous food – jamon iberico – cured ham from Guijuelo is made using Ibiza salt.

Ibiza salt also gets packaged up nicely and sold at a premium in gourmet supermarkets as far afield as Moscow!



At the exchange rate when this photo was taken (in October), the 250g "all natural" box on the right cost the equivalent of about 14 euros. The 500g bag on the left was a little under Eur 13.
